Description:

This recipe was found in my mom's 1966 fundraising cookbook submitted by a community of Chinese immigrant mothers in California. This almond cookie recipe is one of many presented.

Ingredients

cup of toasted almonds

cups sifted four

tsp baking soda

cups crisco or similar shortening

eggs unbeaten
1.5
cup sugar ( if sweeter cookie is desired, 2 cups )
1
tsp almond extract
.25
tsp lime water ( gan sui ) or if none available substitute an equivalent amount of baking soda.

Directions

1.
Sift flour and baking soda together.
2.
Cream shortening and sugar until fluffy. Add one egg, beat mixture thoroughly.
3.
Add almond extract and Gan Sui. Gradually add flour and baking soda mixture. Mix well.
4.
Roll piece of dough into a ball the size of a Walnut. Press flat on ungreased cookie sheet. Brush each cookie with beaten egg.
5.
Press a toasted almond in the middle of each cookie. OR sprinkle some almond pieces. Bake 350 degress for 15-18 minutes.
