Almond Pancake with Cranberry Sauce

Ingredients

¼ cup of ground almonds
½ cup of soy flour
½ cup of whole grain flour

tsp. of baking powder
3
tbsp. of milk powder
3
egg whites
¾ cup of milk
1
cup of raspberries
salt to taste
a dash of vanilla
Olive oil

Directions

1.
Combine the dry ingredients by sieving them.
2.
Mix in the egg whites one at a time.
3.
Add the milk and the vanilla to form a batter.
4.
Spray a non-stick pan with olive oil. Cook the pancakes.
5.
Create the raspberry sauce by crushing them in a blender.
6.
Add some lemon if preferred.
7.
It can be also noted from the above recipe that two important components, almonds and cranberries, are considered as very commendable sources of antioxidants.
