Description:

A delicious lasagna variation that differentiates itself by adding spinach, extra creamy white sauce, and Italian sausage.

1/2 Cups Plain Tomato Sauce
Salt and Pepper

Pound Italian Sausage, crumbled

Pound Ground Beef

Pound Ricotta Cheese
1/2
Pound Cottage Cheese

Eggs

Pound Lasagna Sheets
1
Package of Frozen Spinach, thawed

Cups Mozzarella Cheese, shredded

Directions

1.
Preheat oven to 350 F.

In a large saucepan, melt 5 tablespoons butter over medium heat, until melted. Sift in flour, and whisk until you have a smooth paste. Add milk, one cup at a time, whisking constantly to avoid lumps. Simmer the sauce until thick and smooth. Remove from heat, then whisk in the nutmeg and the tomato sauce. Set aside.

In a frying pan, cook the beef and the italian sausage until browned. Pick apart any large lumps in either meat.

In a separate bowl, mix together ricotta, cottage cheese, and eggs. Season well with salt and pepper. Set aside.

In the bottom of a 13x9 baking dish(choose one with high sides if you can), pour in 1/3 of the previously prepared sauce. Arrange a layer of pasta sheets, covering the bottom of the dish. Evenly spread out all of the ricotta cheese mixture and then layer on top of that the package of frozen spinach. Arrange another layer of pasta sheets, then layer on the meat mixture. Cover this with a thin layer of mozzarella cheese. Then add another layer of 1/3 of the sauce. For the final layer, add another layer of pasta, and cover with the rest of the sauce. Top with a thick layer of mozzarella cheese and arrange 2 tablespoons of small chopped butter pieces on top of the cheese. Bake for 30 minutes, or until cheese is brown and bubbly.
