Description:

These are a wonderful breakfast treat. Easy to make, these pancakes are a great addition to any breakfast table. My mom used to make apple cinnamon pancakes every Christmas morning, they always remind me of the holidays. I veganized the recipe and no one can tell the difference!

Ingredients

1/4 c. AP Flour (if using spelt flour, add an extra 2 T)

t Baking Powder
1/2
t Salt
1
T each Ground Cinnamon and Ground Nutmeg

T Vegetable Oil
1/3
c Apple Juice
1
c Soy Milk (any non-dairy milk will do)
1
t Vanilla
2
T Maple Syrup
1
Granny Smith Apple, chopped finely

Directions

1.
Preheat a heavy bottomed skillet over med. heat. Mix the dry ingredients (flour, baking powder, salt, cinnamon, nutmeg) in a large bowl. In a seperate bowl, mix the rest of the ingredients until well combined. Pour the wet ingredients into the dry and mix until just combined. (Some lumps are okay.) Pour 1/4 c of the mixture onto the preheated skillet and cook until the top bubbles. Flip and cook until both sides are golden brown. Serve right away with syrup, or let cool and freeze.
