Asparagus Bacon Risotto

Description:

Once you know how to make basic risotto you can alter the recipe very easily. For this one you can use whatever type of bacon you like (pancetta, bacon, smoked bacon) and any kind of cheese you like (Parmigiano, kasseri).

Ingredients

4
strips bacon diced
1/4
yellow onion diced
1
cup risotto rice
1/2
cup dry white wine
5-6
cups of organic chicken broth
6
stalks asparagus
1/4
cup grated cheese (I like kasseri - you can get it at a Greek shop)

Directions

1.
Heat the chicken broth and cook the asparagus for about 2 minutes.
2.
Once asparagus is ready, take it out and put it on a plate.
3.
Awk a friend or family member to cut the asparagus into 1 inch pieces while you do the rest of the work.
4.
Keep the broth on low heat.
5.
In a large shallow pan, cook the bacon for about 5 minutes without letting it burn.
6.
Add the diced onions and cook for about 5 minutes stirring constantly.
7.
Add the rice and cook for about 2 minutes stirring constantly.
8.
Add the wine and cook (stirring constantly) until it is dissolved.
9.
Add 1/2 cup of the broth and stir constantly until it has evaporated.
10.
Repeat this until the rice is tender and somewhat mushy (30-45 minutes).
11.
When the rice has reached its desired consistency, add the asparragus & the cheese.
12.
Mix and serve.
