Description:

Sift powdered sugar and cocoa into a mixing bowl. In a separate bowl, melt butter, then add vanilla and beat into the sugar and cocoa mixture. Beat well and add a little warm water to make the icing sticky and not runny. Then take and ordinary sponge cake and cut it into 4 inch squares. Take one lamington at a time and dip it in the chocolate icing, then roll it in the shredded coconut while the icing is still moist. Place the lamingtons on wax paper and let the icing harden. Serve it with coffee or tea. ENJOY!!!

Ingredients

- 1 sponge cake
- 2 cups powdered sugar
- 4 tbsp cocoa powder
- 1 stick butter
- 1 tsp vanilla
- warm water
- 2 cups finely shredded coconut

Directions

Any firm type of plain cake can be used: butter-cake, pound-cake, Madeira cake or genoise sponge. Note: desiccated coconut is a slightly dried shredded coconut - not sweetened."
