Ingredients
1
18 oz box of cake mix (any flavor, I suggest white or
yellow so it doesnt distract from the pumpkin flavor.
1
15 oz can pumpkin puree
1
1/2 cups white chocolate chips
Directions
2.
Mix together pumpkin, eggs, sugar and oil with an electric mixer. Then, add cake mix, cinnamon, and pumpkin pie spice. Here comes the fun part. Cover your hands in flour making sure there is excess. Grab a small handful of the white chocolate ships and pat around chips coating with flour. Mix them into the batter and repeat with the rest of the chips. This makes sure the chips do not sink to the bottom of the batter while its baking. Coat 9x13x2 inch pan with spray of canola oil (or pam). Pour mixture into the pan and bake for about 40 minutes or till a toothpick comes out dry.
3.
As for the frosting...
4.
Pour the syrup into a small saucepan add sugar and stir together. Bring mixture to a boil till a thick thread falls slowly if a spoon is placed in and taken out. When syrup is ready, crack the egg whites into a separate bowl and place on a dish of hot water . Slowly pour syrup over beaten egg whites continuing to beat eggs as syrup is being poured in. Set the bowl which contains the mixture on a dish of hot water, and beat the mixture thoroughly till the egg stiffens somewhat, then spread on the cake.
5.
You can add in anything such as nuts, cinnamon or Pumpkin Pie Spice.
