BAKED STUFFED SHRIMP

Description: 1) Preheat oven to 475 degrees. Butter a large shallow baking dish. 2) Cut shrimp with a sharp knife along the rounded edge of back, almost all the way through. 3) Prepare stuffing mix as directed on package. Dip shrimp in beaten egg. Place a rounded teaspoon of stuffing between the cut edges of the shrimp; press shrimp and stuffing firmly together. Arrange stuffed shrimp in prepared dish. 4) Mix melted butter and garlic in a small bowl. Brush shrimp with butter mixture. 5) Bake until stuffing is lightly browned and cooked through, about 8 minutes. Sprinkle with chopped parsley and serve with fresh lemon wedges on the side.

1 pk (6oz) chicken flavored stuffing mix
1 lg, lightly beaten
1/2 c (1 stick) butter, melted
1 clove garlic, minced
chopped parsley
