Ingredients
One 3-pound chuck roast, rinsed and dried

28-ounce can whole tomatoes (preferably plum tomatoes)

18-ounce bottle of your favorite barbecue sauce (or 2 1/4 cups of your favorite homemade barbecue sauce)

sandwich or hamburger buns
Salt and freshly ground black pepper
Directions

1. Heat olive oil on medium heat in a large pot. For 5 minutes cook onion until translucent. Add tomatoes roughly chopping them in the pot. Add BBQ sauce and increase heat to medium high, simmer for 10 min. Add the chuck roast, simmer, cover until meat is very tender. For about 3 hours stir it occasionally.

2. Remove the meat from the pot, using a knife and fork separate the roast into small pieces then set aside.

3. Increase the heat on the pot to medium high, then reduce the liquid until thick. Heat without cover.

4. Put back the meat into the pan then warm thoroughly. Add salt and pepper to taste.
