Leftover baked sweet potatoes, cut into bite-size pieces

slices bacon, cooked until crisp, each slice cut into 5 pieces

(20-oz.) can pineapple chunks, well drained

Place the sweet potato pieces on ungreased jelly roll pan, and drizzle with butter. Top each sweet potato piece with a piece of bacon, then top that with a pineapple chunk. Secure each stack with a toothpick. Bake at 400 degrees about 5 minutes until heated through. Cool slightly before serving.
