Description:

You can use spaghetti squash (or summer squash) as a substitute for pasta. Add whatever your favorite pasta sauce for a nice vegetarian treat. Super healthy, super easy and super tasty.

Prep:

1 hour cooking time plus 20 min cooling

Ingredients

spaghetti squash.

Directions

1.
With a knife, make about 5 holes on the top of the squash (this will prevent it from exploding)
2.
Put the squash in a baking pan.
3.
Bake in 375 F oven for 1 hour.
4.
Let cool.

When cool to the touch, cut the squash in half lengthwise with a serrated knife.
6.
Take out the seeds with a spoon and the stringy stuff.
7.
Grab a fork and scrape the squash, you will end up with strings that look like a thin angel hair pasta.
8.
Add a little olive oil and salt and pepper and add your favorite pasta sauce.
