Ingredients

slices bacon, chopped (or 1 tbsp bacon grease)

large onion, diced

red bell pepper, diced
1
tspn caraway seed
½ tsp dried oregano
1
tsp dried marjoram (or thyme or sage)
½ tsp black pepper
1
bay leaf
½ tsp red pepper flakes
2
tsp kosher salt
15
ounces canned diced tomatoes
2
cups hot water
8
ounces summer sausage, skin removed, diced small
2
medium potatoes, skins on, diced
1
pound zucchini, diced

Directions

1.In a Dutch oven, cook bacon on medium high.

2.Add the onions and peppers, add spices and cook until onions begin to turn brown.

3.Add tomatoes and water, then bring mixture to a boil.

4.Add the summer sausage and potatoes and again bring to a boil.

5.Maintain a slow simmer, then cover and cook for up to 10-15 minutes.

6.Add the zucchini and cook until tender, for 10 minutes or more.

7.Remove the bay leaf.

8.Serve in bowls with either dollops of sour cream on top and chunks of bread for a dip.
