Description:

Traditional nordic (northern Europe) fish meal. Baltic herring is relative of herring but it is smaller, less fat, milder taste etc. Served often in Christmas, weddings, etc.

Ingredients

500
g baltic herring (choose small ones)
Sauce #1:

dl vinegar

tbsp salt
1
l fresh cold water
Sauce #2
1
tbsp mustard
3
tbsp sugar
1
dl extra virgin olive
1/2
tbsp salt
3
tbsp wine vinegar (taste first, 2 maybe enough)
1/2
litre fresh cold water
Dill
White pepper(crushed)

Directions

1.
Make sauce #1. Put baltic herrings i it and wait two hours.
2.
Take baltic away from the sauce #1. Cut baltic herrings into peaces (1/2 or 1/3). Put baltic herrings, white pepper and dill into the jar (layers: baltic herring peaces, white papper, dill, baltic herring peaces, etc.).
3.
Make sauce #2. Pour into the jar on the baltic herrings and mix slightly. Wait 48 hours.
4.
Serve fish with brown bread, salad or boiler small potatoes.
