Description:

Baltic herring with diffrent kind of sauces are traditional nordic (northern Europe) fish meal. This meal is based on baltic herring with mustard sauce. White pepper is replaced with black pepper, dill is replaced with basil and mustard is replaced with tomato puree.

Ingredients

500
g baltic herring (choose small ones) Sauce #1: 2 dl vinegar 2 tbsp salt 1 l fresh cold water Sauce #2 1 tbsp tomato puree 3 tbsp sugar 1 dl extra virgin olive 1/2 tbsp salt 3 tbsp wine vinegar (taste first, 2 maybe enough) 1/2 litre fresh cold water Basil (crushed) Black pepper(crushed)

Directions

Make sauce #1. Put baltic herrings into it and wait two hours. Take baltic herrings away from the sauce #1. Cut baltic herrings into peaces (1/2 or 1/3). Put baltic herrings, black pepper and basil into the jar (layers: baltic herring peaces, black papper, basil, baltic herring peaces, etc.). Make sauce #2. Pour into the jar on the baltic herrings and mix slightly. Wait 48 hours. Serve fish with bruschetta or salads.
