Description:

Delicious banana nut bread with brown sugar apples. Add your choice of any nut (walnut, pecan, raisins, currants, etc.), and be sure to use super-ripe bananas, the blacker the better!

Ingredients

* For the Apples:
* 2 tbsp unsalted butter
* 3 tbsp packed dark brown sugar
* 2 Granny Smith apples, peeled, cored, cut to 1/2 inch slices
* 1/2 tsp ground cinnamon
* 1/2 tsp pure vanilla extract
* For the Banana Bread:
* 2 cups all purpose flour
* 1 tsp baking soda
* 1/2 tsp ground cinnamon
* 1/4 tsp ground cloves
* 1/4 tsp freshly ground nutmeg
* 1/2 tsp kosher salt
* 8 tbsp (1 stick) unsalted butter
* 1 cup cane sugar
* 2 large eggs
* 1/4 cup fresh orange juice
* 1 tsp pure vanilla extract
* 1 1/4 cup (2 or 3) over ripe mashed bananas

Directions

*position a rack in the center of over and preheat to 350*F, Lightly butter and flour a 1 1/2 qt loaf pan.

Make the Apples:

Preheat a med. skillet over med heat.

Add butter and brown sugar, heat until bubbling.

Add apples and cinnamon, saute til golden and tender, about 5 min.

Stir in the vanilla. Remove heat, set aside to cool.

Make the Banana Bread:

In a medium bowl, whisk together flour, baking soda, cinnamon, cloves, nutmeg, and salt.

Cream butter and sugar until light and fluffy, 1-2 min. (use paddle attachment of electric mixer) Add the eggs one at a time, mixing well after each addition. Scrap bowl.

In a small bowl, combine orange juice and vanilla.

Add the flour mix to the butter mix in three batches, alternating with the orange juice mix. Mix well and Scrape the bowl after each addition. Stir in the bananas until combined. Stir in reserved apples.
12.
Pour the batter into the loaf pan. Bake for 55-60 minutes, until a wooden skewer inserted into center comes out clean. Remove to wire rack to cool for 20 min. Remove from pan, cool completely.
