Banana Cookie

Description: This is a very moist, cake-like cookie.
Ingredients
- 2/3 c. butter or coconut oil
1 c. sugar
2 eggs
2 med. bananas, mashed
3/4 tsp. vanilla
2 c. flour (I used 3/4 Spelt, 1/4 Amaranth)
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. soda
Directions
Banana Cookie:
Mix in order given. Bake at 375 degrees or 400 degrees F. until just done and just beginning to brown slightly.
