Ingredients

(double for more people)
two ripe bananas (outside should be well-spotted, inside is perfect and white)
one egg
pinch of sea salt
butter or light olive or walnut or coconut oil for frying
honey, yogurt, butter, cinnamon to top off

Directions

1.
Mash up bananas in a bowl. This is the most important step because it makes everything easier. Add one beaten egg, mix together--just enough to be light and airy.
2.
Use an ice cream scoop, drop into pan and fry with butter. Smaller pancakes are easier to handle and they don't take long to cook. I fry until it's no longer clear on one side, flip for just a second on the other side then remove onto a plate. You don't want to overcook.
3.
Cinnamon is optional (I'm kidding). You can add it before or after cooking. Cinnamon is also a natural anti-inflammatory so it's good for you. I usually add it after cooking with lots of honey, butter and yogurt on top.
