Description:

This is a base for most Colombian soups that you will make.

Ingredients

16
cups of water.
1
1/2 lb beef bone (ox tail, ribs, etc...)
1/2
lb pork bone (ribs or leg)
4
stalks of scallions

Directions

1.
Cook the bones in water with the scallion for at least 2 hours in a covered pot.
2.
Once in a while, skim out the foam that builds up on top.
3.
Strain the broth.
4.
Use in soups.
5.
If you skim off the fat and put in a tupperware, you can freeze and use later.
