This wonderful, filling stew is not only easy enough for any day but impressive enough for guests!

Ingredients

1
lb stew meat
salt and pepper, to taste
1
large onion
3
leeks
3
large carrots, sliced
3
turnips, sliced
3
tbsp sugar

1/2 cups beef stock
1
1/2 cups red wine
2
tbsp. butter
1/2
cup pearl onions
1
cup mushrooms, sliced
2
potatoes, sliced
4
cloves garlic, minced
parsley

Directions

1.
1.) In a large pan saute stew meat, set aside in a large soup pot. If you are not serving right away, place in a crock pot.
2.
2.) Saute in 1 tbsp of the butter onion, leeks, carrots, turnips, and sugar for 8 minutes and add to meat.
3.
3.) Saute mushrooms in remaining butter for 10 min. and add to meat and vegetables.
4.
4.) Begin heating meat and vegetables. Add remaining ingredients and bring to a boil. Reduce heatt to a slow simmer. Cover pot and simmer for a minimum of 45 minutes. This stew can simmer all day in a crock pot and is especially good the next day for lunch!
