It's a pretty simple technique and one that everyone needs to know.

Ingredients

Asparagus
Water
Bowl of ice water

Directions

1.
Bring water to poach over medium high heat.
2.
Add the asparagus and cook it until the color becomes very green.
3.
The spears should just barely bend when picked up out of the water
4.
This should take between 3-5 minutes
5.
Put the asparagus in bowl with ice water. This will stop the cooking process and keep the asparagus crispy.
