Boiled Yuca or Boiled Cassava

Description:

In the US it is known as cassava, but in Colombia where I was born it is yuca. We use it all the time, we fry it, boil it. It goes great with mojo or even with mayonnaise. You can buy them frozen in the store to make your life easier, but here is the recipe if you buy the root at the store.

Ingredients

3
yucas about 1 foot long
2
tbsp of salt
large pot
water

Directions

1.
First Peel and cut the yuca into 5 inch chunks
2.
Fill the pot with water and add salt
3.
Bring the water to a boil
4.
Add the yuca and boil for about 45 minutes
5.
Poke it with a fork when it is soft and mushy it is ready
6.
Strain the yuca and serve
7.
Top with mojo, mayonnaise, butter, whatever you like
