Description:

Brains are delicious, no sense in wasting them. If you have the guts, try this recipe. This is a recipe Andrew Zimmern would love.

Ingredients

Beef brains (or veal)

Tbsp butter
1
tbsp olive oil
2
sprinkles all spice
2
egg yolks
2
tbsp lemon juice
salt and pepper to taste

Directions

1.
"Parboiling or blanching is a cooking technique in which something is partially cooked in boiling water, but removed before it is cooked all the way through."
2.
Preheat oven to 350F.
3.
Parboil the brains.
4.
Clean and skin the brains (without breaking).
5.
Melt the butter and oil in a casserole.
6.
Place the brains in the casserole.
7.
Drizzle melted butter/oil on the brains.
8.
Season with salt, pepper and all spice.
9.
Bake (uncovered) for 45 minutes.
10.
When you have about 10 minutes left of baking, mix the egg yolks with the lemon juice until you have a smooth texture.
11.
Pour over the brains as a dressing.
