Ingredients

cups pre-cooked brown rice
1
can fat free or reduced fat cream of mushroom soup
1
cup thawed frozen broccoli (works best with florets only)
1
cup of your favorite fat free or reduced fat cheese (shredded)
Directions

In a 8X8 square baking dish, mix all ingredients - reserving 1/2 cup of the cheese for topping off later. Bake at 300 for 15 minutes, remove and add remaining cheese. Bake for another 10 minutes or until cheese is fully melted and bubbly. Let rest for at least 10 minutes before serving.
