slices Bacon -- cut in 1 inch pieces
1 tbsp Minced fresh parsley
3 cups Broccoli flowerets & stalks
1 cup Peeled and chopped tomato
1 cup Coursely chopped spinach
Directions

In a heavy pot, saute bacon until crisp. Add mushrooms, onion, garlic and fresh parsley.

Cook for 5 minutes. Add broth, broccoli, tomato, thyme, salt and pepper. Cook on low heat for 25 minutes. Add spinach and cheese. Cook for 5 minutes more.
