Ingredients
1) about a cup thinly sliced up onion
2) 2 on the vine ripened tomatoes
4) 1/4 tsp freshly cracked black pepper
5) 3 cloves garlic finely minced
7) 1/4 a green pepper, finely minced
8) 1/4 a sweet red pepper, finely minced
10) either montery jack cheese, or romano, about a half cup
11) non stick cooking spray

--- spray frying pan with non-stick cooking spray, then add onion, red & green pepper. stir around and let simmer for 5 min. Now add tomato, capers, and pepper. cook for 3 to 4 min, stirring often. now place mixture in a small bowl.

--- Cut bread, about 1/4 inch thick, and abaout 3 to 4 pieces. mix garlic in a small bowl with olive oil, and spread garlic mixture evenly over surfaces of bread. place bread on a pan and pop it in the oven at 350, for about 4 or 5 minutes. ( all your doing there is making the bread a little more crispy so that when you put your tomato mixture on it, it will not get soggy). Now take out and place tomato mixture evenly on the bread surfaces, sprinkle with cheese, and broil until cheese, is melted and bubbling a little.
