Has a bit of a bite but when all is said and done you can't beat the taste.

Ingredients

Makes 12 oysters (with some leftover salsa)

oysters, shucked, in the shell
3
vine-ripened fresh tomatoes
1/2
of a red onion, chopped
1
ounce Tequila
1/2
of a Jalapeno Pepper
4
ounces cilantro (Several bunches or a good handful)
salt

Directions

1.
Place the tomatoes, onion, tequila, pepper, cilantro and a pinch of salt in a food processor bowl. Process until coarsely chopped.
2.
Add a heaping spoonful to each oyster and serve.
