oysters, shucked, in the shell
3
vine-ripened fresh tomatoes
1/2
of a red onion, chopped
4
ounces cilantro (Several bunches or a good handful)
Directions
1.
Place the tomatoes, onion, tequila, pepper, cilantro and a pinch of salt in a food processor bowl. Process until coarsely chopped.
2.
Add a heaping spoonful to each oyster and serve.
