Directions
1.
In a pan big enough for 4 fillets, (corningware works the best)
2.
mix a pound of thawed frozed spinich,
3.
enough heavy cream to moisten spinich,
4.
at least two tablespoons of tarragon, and,
5.
Acouple capfuls of lemon juice.
6.
Place Tilapa fillets on top, pad with butter, salt and pepper,
7.
sprinkle with lemon juice, bake at 350 until fish flakes - about 30 minutes
