Carrot and Cucumber Hosomaki Sushi

Ingredients

large carrot
1
cucumber (4 inches long)
3
tbsp sake
1/2
tsp sugar
1/4
tsp salt
2
toasted nori sheets

2/3 cups prepared sushi rice (check out other recipes on the site)
1
tsp wasabi paste
Equipment - rolling mat

Directions

1.
Peel the carrot and cut length wise in about 1/4 inch slices.
2.
Cut them in 1/4 inch strips.
3.
Wash the cucumber and dryit.
4.
Cut off the peel about 1/4 inch thick.
5.
Cut into 1/4 inch wide strips.
6.
Bring sake, 2 tbsp water, sugar and salt to a boil in a pan.
7.
Add the carrot strips and let simmer with a lid for 1 minute.
8.
Remove it from hear and add cucumber strips to the carrots.
9.
Let it cool in the broth.
10.
Take out the veggies and pat dry with a paper towel.
11.
Cut each nori sheet in half. Get your rolling mat and place the nori on it. Roll the sticky rice onto the nori sheet. Place the veggies inside, roll and cut.
