Tbsp mirin (low alcohol rice wine)

Cut the carrots into match stick shapes.

Let sit for 25 minutes.

Rinse carrots in cold water.

Mix vinegar, soy sauce and mirin.

Add carrots and leave for 3 hours.

Heat a pan on high heat.

Cook the sesame seeds until they pop.

Remove from heat and let cool.

Put the carrots in a serving bowl and sprinkle with sesame seeds.
