large cauliflower, broken into florets
1/4
cup diced green pepper
8oz jar of sliced mushrooms, drained
1/3
cup all-purpose flour
4oz shredded Swiss cheese
Optional Garnish: Paprika
Directions

In large saucepan, cook cauliflower in small amount of water until tender; drain well. In a medium saucepan, saute green peppers and mushrooms in butter for 2 minutes. Add flour; gradually stir in milk. Bring to a boil; boil for 2 minutes, stir in cheese until melted. Add pimentos and salt. Place half of the cauliflower in a greased 2-quart baking dish; top with half of the sauce. Repeat layers. Bake uncovered at 325 degrees for 25 minutes or until bubbling. Optionally, sprinkle with paprika.
