T butter 1 Scallion Stalk chopped 1 c water 1 c milk 2 eggs 1/4 lb Colombian White Cheese Cubed Scallion & Salt to taste

Melt Butter, Fry the Scallion in the butter slightly, Add milk and water bringing to a boil, carefully add the eggs into the mixture once water is boiling. Stir carefully without breaking the yolk of the eggs. Once yolk is cooked, turn off heat. Put cubed Colombian Cheese into two bowls. Carefully ladle the soup into the bowls making sure not to break the yolk. Garnish with Cilantro and add salt to taste. Drink the soup first leaving the cheese for last. It is delicious and my favorite breakfast dish.
