Description:

I usually make this during summer and have it around at all times with some chips. Great snack. If you want to make a meal of it put some on a tortillia and add a spoonful of sour cream. YUM!

Ingredients

ears corn, roasted or grilled
1
can black beans, drained and rinsed
1/4
cup chopped jalapeno pepper, seeds and ribs removed
1
medium tomato, chopped, seeds removed
1/4
cup cilantro, chopped
2
cloves garlic, minced
2
tbsp extra virgin olive oil
Juice of one lime
Salt and pepper, to taste

Directions

1.
Cut corn from cobs. (Canned or frozen may be substituted.) Combine all ingredients, chill and serve.
2.
This tastes better the next day and even better the next!
