Description:

A traditional recipe that combines sweet cookies and tart fruit. Perfect for parties or gift giving.

Ingredients

To make the pastry:

cup butter, softened
3
ounces cream cheese, softened
2
1/2 cups all-purpose flour
1/4
cup granulated sugar
To make the filling:
1
(approx. 10 ounce) package frozen cherries
2
tbsp tart cherry juice concentrate
1/4
cup granulated sugar
1
tbsp cornstarch
2
tbsp water
1/2
cup chopped walnuts
Egg Wash (1 egg whisked with 2 tbsp milk)
Crystallized sugar

Directions

1.
For pastry- Beat together the butter and cream cheese with a mixer. Slowly add in the flour and sugar and beat on low speed until crumbly. Place the dough in a lightly floured surface (table, counter, cutting board) and kneed until ti forms a dough ball. Chill this for 30 minutes.

for filling- Coarsely chop the frozen cherries in a food processor. In a saucepan combine the cherries, cornstarch, water, sugar and cherry juice over medium heat. Bring to a boil stirring constantly. Then simmer uncovered for 5 minutes. Chill this for 30 minutes.

Roll out 1/3 of the dough into a 10 inch circle. Spread approximately 1/3 of the filling onto the dough and cut into 8 pizza shaped wedges. Roll these wedges up. Repeat with the remaining dough and filling.
4.
Place on a baking sheet. Bake at 350 degrees for 15 minutes or until golden brown.
