cup coarsely chopped fresh parsley

tbsp whole-grain Dijon mustard

tbsp extra virgin olive oil

tsp freshly ground black pepper

pound small red potatoes

tsp salt 1/2 pound diagonally cut green beans 2 cups cubed cooked chicken (about 8 ounces)

(10-ounce) package gourmet salad greens (about 6 cups)

1. Combine chopped fresh parsley, red wine vinegar, fresh lemon juice, whole-grain Dijon mustard, extra virgin olive oil, tsp salt, tsp freshly ground black pepper, garlic.

1. In a saucepan, place potatoes and cover with water.

2. Add 1 tsp of salt to the pan, and boil.

3. Add beans and cook for 4 more minutes or until beans are tender.

4. Rinse with cold water and drain well.

5. Slice potatoes into quarter. In a large bowl place potatoes, beans, chicken, onion, and greens.

6. Drizzle with dressing; toss gently to coat and immediately.
