1/4 lbs ground beef OR chopped beef (any cut)
1/2
onion, white/yellow, minced
1/2
onion, white/yellow, chopped
5
diced scallions
6
peppers, jalapeno, circle sliced
8
peppers, serranos, circle sliced
2
peppers, poblanos, chopped
1
pepper, poblano, minced
5
cloves, garlic, minced
14.5
oz can, tomatoes, diced
14.5
oz can, tomatoes, crushed or sauce
14.5
oz can, beans, kidney
14.5
oz can, beans, Bush's Original
2
Tbsp, Creole seasoning
1
Tbsp, ground cumin
5
Tbsp, cilantro, fresh

Directions

1.
Cook the meat halfway (on high) in the pot with the garlic, cilantro, minced onions, minced peppers, and 2/3 of the spices. 1/2 cup of red wine or beer may be added while cooking the meat. Turn the stove to low and add the remaining peppers and onions. Simmer for 15 minutes. Add the beans and tomatoes. Cook (1 for electric, low for gas) for 1 hour, stirring periodically, and add the remaining spices. Cook for at least 1 more hour, stirring periodically, or until the consistency is such that it can be eaten with a fork.
2.
This isn't the best chili in the world, unless I cook it, but it's pretty damn good.
