(10 ounce) box of spinach, thawed

cups of low-fat cheese, cheddar
Directions

Preheat oven to 350 F. Lightly grease a 9" pie plate. Saute onions and garlic in the vegetable oil. Add spinach to the onion and garlic and cook for about 2 minutes. In a separate bowl, add the beaten eggs, 3 cups of low-fat cheddar cheese, salt and pepper and water. When spinach mixture has cooled, add to the egg mixture and blend well. Pour into the pie plate and cook for 30 minutes. Let stand 10 minutes before serving.
