Ingredients

10
cups of water
2
lbs of dried beef (beef that has been dried by the sun)
4
green plantains
1
pound fresh yuca
1
pound of pumpkin or another type of squash
3
stalks of scallion
cilantro
2
garlic cloves

Directions

1.
Let the meat sit in salted water for 2 hours.
2.
Peel the plantains and cut them into pieces by hand.
3.
Peel and chop the yuca finely.
4.
Peel and chop the pumpkin.
5.
Chop the garlic.
6.
Take the meat out and wash it in water.
7.
Cook it in water for one hour.
8.
When it is tender, take it out and chop it in 1 inch squares.
9.
Put it back in the broth.
10.
Add the plantain and cook for 15 minutes.
11.
Add the yuca and finally the pumpkin and scallions.
12.
Lower the heat, cover and cook for 25 minutes more.
13.
Add the cilantro and garlic and season with salt and pepper.
