Colombian Style Tongue in Sauce

Description:

When I was little in Colombia we ate all the parts of the cow, tongue, brain, everything. The stuff was delicious. Hope some of you are brave enough to try this recipe. Tongue has a sweetness that will leave you wanting more.

Ingredients

pounds of beef tongue.
1
cup hogao (mixture of tomatoes, scallions slowly fried into a sauce)
1
1/2 bottle of beer

Laurel leaves
1
tsp thyme
3
tbsp butter
3
tbsp oil
2
tbsp flour
2
tbsp chopped cilantro
salt and pepper to taste

Directions

1.
Beat the tongue just a little.
2.
Wash it.
3.
Cook it with the hogao, beer, laurel, thyme, salt and pepper for 2 and a half to three hours (to reduce cooking time try a pressure cooker - should bring it down to 45 minutes to an hour).

Take out the tongue, peel it.
5.
Cut the tongue into strips.
6.
Coat them in flour and fry them in equal parts of butter and oil until they are golden.
7.
Put them back in the pot and cover them in the sauce that was there.
8.
Heat over low heat for 10-15 minutes.
9.
Sprinkle with the cilantro and serve over white rice.
