Description:

Can be served with green salad and crusty bread as main dish, if no meat is desired. Also, can be served drizzled with maple syrup.

Ingredients

beaten eggs
1/2
cup milk
1
cup flour
1
tsp baking powder
1
tsp salt
1
tsp melted fat or salad oil
1
cup corn niblets, if canned, drain first

Directions

1.
Stir the milk into the beaten egg mixture, mix together the flour, baking powder and salt and stir into the egg/milk. Beat in the teaspoon of fat/oil. Add the corn and stir together. Fry in salad oil over medium heat until fritter batter bubbles appear on top, then turn over and brown on other side.
