Ingredients

3/4
pound of country ham, cut into 1/4-inch cubes
2
1/2 pounds of boneless pork butt or shoulder, cut into 1-inch cubes
2/3
pound of pork fat, cut into 1-inch cubes
4
tsp of red pepper flakes
1
tbsp of kosher salt
2
tsp of ground black pepper
1
tbsp of dried, ground (rubbed) sage
1/2
tsp of cayenne pepper
1/4
cup of ice water

Directions

1.
Finely grind country ham in a food processor.
2.
Toss meats with all seasonings except water and place in freezer until
3.
semi-frozen, about 1 1/2 hours.
4.
Grind meat using 3/8-inch plate. (Or pulse in a food processor until
5.
about the size of baby peas.) Add water and ham to mixture and knead
6.
and squeeze to mix thoroughly, or use paddle attachment on your stand
7.
mixer on low. Refrigerate for 1 hour, then fry a small patty, taste
8.
and adjust seasonings.
9.
At this point you can stuff casings using a stuffer or divide into
10.
bulk portions for later use.
11.
For a real Memorial Day treat, grill patties then top with sharp
12.
cheddar cheese and serve on fresh biscuits.
