Curried Red Lentils

This Indian inspired dish is super healthy and super delicious

Ingredients

2
cups dried red lentils
1
large red onion
2
tbsp extra virgin olive oil
2
tbsp curry yellow paste
1
tbsp curry powder
1
tsp ground turmeric
1
tsp ground cumin
1
tsp chili powder
1
Kosher tsp salt
1
tsp white sugar
1
tsp minced garlic
1
tsp ground ginger powder, minced
14
oz can tomato puree

Directions

1.
Chop the onion
2.
Wash the lentils in a strainer thoroughly with cold water until the water runs clear.
3.
Do it again just in case otherwise a bubbly buildup from the protein will come up in your lentils.
4.
In a large pot, put the washed lentils, add water until it is about 1 inch over the lentils and bring to a boil.
5.
In a saucepan, put the olive oil and cook the onions over low heat until they are sweet.
6.
In the mean time, add the rest of the ingredients (EXCEPT THE TOMATOES) and mix thoroughly.
7.
Add to the onions and cook for 2 minutes while stirring.
8.
Add the tomatoes and cook for another 5 minutes.
9.
When the lentils are ready (should be about 15 minutes, these don't take as long as regular lentils) strain the lentils and add them to the onion paste.
10.
Serve over Basmati rice
