Curried Tofu

Ingredients

1
pack firm tofu
2
tsp veggie oil
1/2
onion (sliced in a mandolin)
3
garlic cloves (chop in a food processor)

T fresh ginger finely chopped
Fresh cayenne pepper to taste (you can use whatever pepper you like for spice or leave this out if your tongue is wimpy) seeded and diced

tsp tumeric
1/2
tsp curry powder
1
C coconut milk
3
cloves
one cinnamon stick
3T chopped cilantro
salt
1
C frozen peas
clean kitchen towel

Directions

1.
Drain tofu, wrap in towel and press. If you don't have a towel, use a bunch of paper towels. This gets rid of the excess liquid. Set it aside this way while you prep the rest.
2.
Heat the oil.
3.
Add onion, cook over medium heat until the onion is see through.
4.
Add garlic, ginger, peppers, tumeric, curry & cook for about 2 minutes.
5.
Add coconut milk, spices, cilantro & salt.
6.
Lower the flame and simmer.
7.
Slice the tofu about 3/8 inch thick.
8.
Slice the slices into triangles.
9.
Stir the sauce and see if it needs salt.
10.
Add the tofu gently on the pan & spoon sauce over them.
11.
Raise the heat a little and cook for 5 minutes.
12.
Add peas and cook for another minute or two.
13.
You can serve this over Jasmine Rice.
