Description:

This is what I like to call a hearty Southeastern Ohio style chili. It's a little bit of everything and most ingredients can be had cheaply by using frozen or canned items. It doesn't take too long to prepare, but cook time is about half an hour to forty five minutes. My husband, who is vegetarian but not vegan, enjoys it when he's sick of animal products. This is his tried and true recipe!

Ingredients

1
pound of extra firm tofu
40
ounces of tomato juice

small can of tomato paste

diced tomato (or can of diced tomatoes)

can of corn
1
cup of black beans
1/2
cup of chopped yellow onion
2
tbsp of red bell pepper
1
cup of chopped celery
1/2
clove of garlic
1
small can of mushrooms.
a pinch of salt
pepper to taste
1/2
tsp brown sugar
1
cup of rice (optional)

Directions

1.
Combine the tomato juice, tomato paste, and diced tomatoes. Let simmer on medium heat.
2.
Prepare the tofu - chop into cubes of whatever size looks appealing. When the tomato mixture starts to boil, add the tofu. Reduce the heat to medium low to low, so that it's simmering.
3.
Five minutes after adding the tofu, add the beans, corn, onion, peppers, celery mushroons, and garlic. If you are using rice, add that now also.
4.
About 25 minutes after adding the vegetables, add the sugar, salt, pepper, and whatever other seasonings you might want to include.
5.
Let simmer for five minutes longer, and your chili should be done.
