Diet Blueberry Frozen Yogurt

Description:

This frozen yogurt is both healthy and delicious! It uses Agar-Agar, the Asian version of gelatin, which is plant-derived and has many health benefits. Agar-Agar can be found at Asian grocery stores and most health-food stores.

Ingredients

cups blueberries

tbsp agar-agar powder
¼ cup cold water
¼ cup splenda
16
oz light vanilla yogurt

Directions

1.
Put water and Agar-Agar in saucepan; let set for 10 minutes. Puree fruit in a blender, set aside. Add Splenda to water and Agar-Agar mixture; bring to a boil and stir until dissolved (be sure to boil for at least 5 minutes). Add this mixtue and the yogurt to the fruit in the blender; puree until well blended. Pour into a 9” square dish and freeze until partially set (3 or 4 hours). Cut into pieces and mix until smooth (either in the blender or with a hand mixer). Put into a freezer container, and freeze until firm. Enjoy!
