Ingredients
Chicken breast--skin removed.
Fresh, ripe mango, chopped
Fresh whole jalapeno pepper
Leeks, some quartered, some chopped.
Fresh ground black pepper.
Directions

Saute or grill the chicken with a few drops of olive oil in a pan with a quartered leek.

Season chicken with fresh ground black pepper, add a dash of cayenne pepper.
3.
Season with juice from a fresh lemon squeezed over the chicken after it is cooked.
4.
Serve the chicken topped with chopped fresh mango, chopped leeks, chopped jalapenos, and chopped fresh tomatoes sprinkled with fresh ground pepper and a graced with another squeeze of fresh lemon juice.
