Ingredients

potatoes, sliced 1/3-inch thick
salt and freshly ground black pepper

pounds white fish filets (cod, haddock, etc.) in serving sized pieces
Directions

1. In a large pot, heat butter and olive oil. Add onions and spices. Cook until onions are soft.

2. Add potatoes and water. Bring to boiling and cook for 10 minutes,

3. Smash some of the potatoes to thicken broth. Add fish and cook over low heat for 5 minutes. Turn off heat and allow the soup to sit for 10 minutes.

4. Mix milk and milk powder. Add to pot. Stir carefully and add salt and pepper to taste.

5. When ready to serve, bring soup almost to boiling. To serve, gently lift a few fish pieces and serve in each bowl, then ladle soup.
