Egg whites ( or 4 eggs)

cup sugar-free apple sauce
Directions

Preheat oven to 350 degrees F. lightly spray a 9X13 cake pan and lightly flour. In large mixing bowl, beat together eggs, apple sauce, oil, Splenda, and 2 tsp vanilla. Mix in flour, baking powder, baking soda, salt and cinnamon. Fold in grated carrots. Pour into prepared pan. Bake in the pre-heated oven for 40 to 50 minutes, OR until a toothpick inserted into centre of cake comes out clean. Cool in pan for 10-15 minutes.

Turn out cake onto wire rack and cool completely. Cut into 18 pieces and serve.

Beat together softened cream cheese, softened butter, icing sugar and vanilla until smooth. Spread over cooled cake.
