Directions

Sauté cabbage and onions for 5 minutes. Reduce heat, continue cooking until cabbage is golden (5 minutes). Add carrots. Cook another 5 minutes.

Cool to room temperature.

In large bowl, combine beef, eggs, bread cumbs, spices, vinegar and water.

Add cooked vegetables and potatoes to mixture. Mix well.

Place in shallow baking pan and shape into 8 inch loaf. Cover tightly with aluminum foil and bake at 350 for 30 minutes. Uncover and bake for another 30 minutes. Let meat loaf rest for 15 minutes before serving. Makes 8 servings.
