Tofu - extra firm, sliced into small cubes
Fresh ground black pepper
Directions

Prepare packaged yellow rice while cooking the other ingredients.
2.
Sauté sliced tofu and baby carrots in hot pan with a few drops of olive oil , ground black pepper, and red pepper flakes, until tofu is browned on all sides.
3.
Lightly fry egg whites in a separate pan.
4.
Cook fresh or frozen geen peas in boiling water for a few minutes while preparing the tofu.
5.
Add yellow rice, green peas, and egg whites to the sautéed tofu.
6.
Top with chopped tomatoes and cilantro to serve.
