Ingredients

pound chicken livers, finely chopped
1
cup chopped onion (I like yellow)
1/2
cup chopped green bell pepper
1/4
cup chopped fresh parsley leaves
Salt and freshly ground black pepper
Directions

Add the chicken stock to the white rice, scallion and oil.

Bring to a boil, cover and simmer for 30 minutes.
3.
Cook the sausage and livers in a large skillet.
4.
Add the vegetables and sautee until they are soft.
5.
Add the rice and parsley.
6.
Season with salt and pepper.
